Just curious about this, as I have two saves done different, but only one of them I completed the assignments.
Does the completion of assignments in ME2 affect anything in ME3?

I am sure there will be at least some that have small little content. No matter how tiny it might have been. For instance, in ME1 if you helped the couple determine how the mothers baby is handled, you see those 2 people engaged in different conversations on the citadel in ME2. Its tiny and minute, but always interesting to see.

Like ME going on to ME2, you'll most likely get a couple in cutscenes (or spoken about in cutscenes) and the rest is in your email.
