The quarians colonized other worlds. Settlers would go through a state of mild illness, before their body adapted.
Tali quotes that in ME2.
As for what race should go extinct:
Batarians, Vorcha, Volus.
I don't want to see extinct:
Asari, Drell, Geth, Humans, Krogans, Quarians, Salarians, Turians.
