 Can I change my companions in game? or am i stuck with the ones i chose earlier?

I'm not sure what you mean. You can add any of your companions to your party - but in most cases you can only do so on leaving the Camp. There are a few areas where it's possible to do so as well, but generally go to the camp and choose the party you want before leaving. Those are with you until you go back to the camp again.

shhhh, I think they haven't found the camp yet... I didn't until after um... the entire redcliff bit... including the urn... on my first playthrough

Use the PHS on the world map (press triangle to open the menu). You can also switch party members on the Highwind.
