There are a lot of things that seem to be different, but they might just be in my head. Does anyone actually have the specifics?
Things I've noticed in silver vs bronze:
- More high level enemies, particularly centurions.
- Ammo stashes only resupply ONE grenade
- Enemies are smarter and more aggressive (?)
- Enemies are less likely to be stunned by headshots (?)
- Less health and ammo automatically replenished after a wave (?)
- Enemies have more health (?)
- Enemies do more damage, or are more accurate (?)
What exactly are the differences between the difficulty levels?

Well, in gold, you cant touch someones health until there protections are stripped away, meaning, a cloaked widow head shot to a phantom with one bar of barrier up, will only knock down that one bar. Im not sure if that is intentional or not however.

Are you sure about the grenade thing ? I didn't noticed this in Silver, or in Gold.

The grenade thing is more to do with lag than anything else. I've had particularly laggy games where I've gone up to the stash and it hasn't replenished any grenades at all, multiple times.
Talking solely bronze vs silver, you've pretty much got the gist. There are not only more high level enemies in general, but more per round as well - for example, instead of just one Atlas and two phantoms in round 10 on bronze for example, there are four Atlases and phantoms to deal with. And with increased health. Fun-cakes!

highlevel enemies also join the game earlier. On bronce, the first wave consists of nothing but assault troopers. On gold, you will have nemesis in the first wave.
