If my LI dies, go to Omega and get completely wasted and then blow a years wages on some asari dancer.

First, I would have a few choice words with the Turian councilor, maybe even a punch or two. Then, I'd throw a nice little party on the Citadel, where a certain reporter may or may not get punched again, get a statue or a thousand commissioned for each world I just saved, and finally I'd settle in on Eden Prime with Liara and raise a bunch of little blue babies.
