No offence intended but why do Ash and Kaidan suddenly bat for the other team while the girl with the shaved head and tattoos who "approaches sex casually" is 100% straight? I don't want to deny anyone from loving their favourite character, but if Bioware are going to retcon sexuality why only do it to some characters and not others that it would make more sense for?

To answer your question: ME2 LIs have comparatively small roles in ME3, whereas one of Ashley and Kaidan were guaranteed to be in the game.
Also, the dialogues in their same-sex romance arc rely on them knowing Shepard since the first game. It gives a trilogy-spanning feature to the arc that wouldn't be present with someone like Jack.
Finally, since no sexuality was ever established for Ashley and Kaidan in Mass Effect (and no, the opportunity to romance one gender doesn't imply heterosexuality), having them available for both genders of Shepard in ME3 is not a retcon. That argument is plainly wrong.
