After playing the demo I seriously hope that isn't where the game picks up from. The mission was absolutely amazing with the Reapers invading but I certainly want more back story as to the fate of Shepard and Crew etc. 

Also, is anyone able to explain why Anderson is no longer Councilor? 
I looked up the main canon storyline and in one of the books Udina is Councilor and in Demo Anderson is Admirial....

The intro in the demo is identical to the intro in the full game. This was confirmed by Bioware.

If you chose Anderson as councillor, he quits after ME2 to work on preparing the Alliance for the Reaper threat. It's in the codex, so you won't need to read the book to understand.

Okay, do you also know then if events between Me2 and Me3 have a form in or out of the game?

One can only hope they are explained, but from what I've been told, I'm not too optimistic.
