The 'Noobshep"is the only way to go
Everything after that is more or less pure roleplay or planned out. Only on the first one do you get a story with real unexpected consequences of choises you make.

If I transferred the HDD data from a 120GB to the 250GB through the transfer cable, does all the data on the original get deleted? If so, then I lost my original Shep. If not, then I'm going to go back and get my original Shep.

I still have and play with my first Shepard and don't regret any decision I've made in my first play through. It's the biggest fun to walk into game's realm not knowing anything about what will happen so I make choices based on how would I react in a situation like that. The 2nd or 3rd play through is just filling the gaps or exploring "what if" to me. The 1st is always the best and I always carry on from that save if sequel let's me do that.

The only mistake I made with my noob Shep was sending Grunt back with the Normandy survivors, meaning Mordin died while holding the line. I've not let it happen again.

Technically I do. I redesigned him after the first play (since ME1 won't let you redesign faces on imports...), so the actual file? Not anymore. But his major decisions and personality are still there. Not much has changed over the many times I've played him, except covering some side quests I missed the first time around. Major things like saving/romancing Ashley, letting the Council die, etc - are still the same in his current play.
He's my canon Shep, so I always play him first in new installments, and I've found my original choices with him are rarely changed over multiple plays. I have my femShep and a couple alternates if I really want to see something different pan out.

Some pretty good NoobSheps guys, keep them coming 
I didn't really do alot of the side missions in my first playthrough in ME1 either, which meant I missed every cameo appearance in ME2
I was too busy playing the main story constantly thinking 'OMG DIS IS SOO LYK A MOOVEE'

My "first Shep" is my favorite Shep. I had someone help me with the character creation so that it looks 99% exactly like me.
Noobish things I did:
Maxed out Charm AND Intimidate (along with Spectre Training and Assault Training)
Saved Kaidan instead of Ashley (no biggie, but I've saved Ash just about every male playthrough since)
Told the fleet to "focus on Sovereign," resulting in The Council's death. I figured that they'd somehow save the Council while making their way towards Sovereign (or something like that). I saw the "Let Council die" option and said, "I don't want to do that!" So I went with the "Focus on Sovereign" option and, well, FML.
ME2:
Romanced Miranda instead of Tali (in my defense, I knew this wasn't going to be my definitive playthrough, so I flipped a hormonal coin and went with Miranda).
Broke off unintentional relationship with Jack.
Lost the Cerebus Normandy crew (ALL of them).
I DID fail Thane and Samara's loyalty missions (I think), but immediately re-loaded and fixed that, so I dunno if those count.
Let Garrus kill Sidonis.

Yup have my first ever Shepard sitting there for ME3. Will be used for my first runthrough of ME3 where I dont go back and change things if I dont like what happened (i.e. missing some people that I kept alive in all my other playthroughs in ME1/ME2). So looking forward to seeing what happens and what differences there will be between that and other playthroughs.

I remember everything my Noob Shepard did but I unfortunately redid his SM and got a perfect ending. I might use a save editor to fix that.

Not only do I still have my first ever Shepard (signified by the fact that the "date created" is STILL listed as November 22nd 2005), but my first ever shepard will be the first I transfer to ME3.

Nope my first ever Shep was on the 360 but that ended up bricking, but beefed up my computer in 2008 so bought the PC version when it was released, and imported my saves that way.

My first Shep only made it to level 37, but aside from that, everything was relatively uneventful. When I carried over to ME2 however, half of my crew was melted down, I lost Thane in the vents, and Zaeed died leading the remaining crew back to the Normandy. I restarted three characters in ME1 and am currently taking the first one through ME2.

Still have my original Shep from my first playthrough of ME1 on the PC. I actually beat the game on the Xbox first since at the time PC version was aways off. For the most part I did everything and so didn't have to play through again, but it's funny since my main canon Shep was level 50 for a long time so importing into ME2 didn't give me the full bonuses. Only thing I actually missed doing on the playthrough was the Terra Firma party quest.
