I'd say go for the Sentry Turret (with Flamethrower, that's important, as that's the point of it).
It works really well once you learn how to deploy it properly (usually behind an enemy group, so you have a portable flanking buddy, again, with a Flamethrower that showers death.)
It also has a low cooldown so you can basically toss it in every room before you enter, messing up enemy lines.
Did I mention the Flamethrower?

I went with max Sentry Turret (Shock/Cryo Ammo/Flamethrower), and maxed Incinerate/Cryo Blast spec'd to combo. I put the rest evenly in Fitness and Quarian Defender, not sure if that was the smart move.

Thats similair to my build - cant quite remember how I specced up the passives but the main thing is flamethrower turret, max incinerate with 100% damage to frozen targets and enough levels in cryoblast to give a decent duration.

I use pistols to keep recharge low but sometimes use the avenger with scope as this also keeps my cooldown at 200%

The flamethrower turret is good, but the rest kind of depends on your playstyle. Personally, I always max out fitness on my characters for maximum survivability.

Flamethrower adaptation is MUCH better than rockets on the turret. The problem is the turret AI is dumb and will happily shoot rockets at walls/cover and ignore things it can actually hit. If that is ever fixed, the rockets will actually be good.
Quarian engineers are ALL ABOUT tech explosion. That means a lot of power spam, which means keeping your weight down.
I recommend combining whatever SMG + Heavy pistol you can manage while keeping your cooldowns as short as possible (once you have everything upgraded you have a lot of options for which two guns to take).
Your weakness is that you lack a power to strip shields easily (you will have overload envy). But a well placed flamethrower turret more than makes up for this.

Your weapons are a play style choice imo, all your powers have respectable cool downs so I would recommend running with two weapons though, I prefer sniper and smg or shotgun and pistol.

I maxed my turret for armor penetration, damage and rockets, works great for me.
