who knows, maybe bioware will give us gender as the final customization in the full game... unlikely... but maybe

Bioware are apparently going to put in some new races in multiplayer. So we may see them. To quote the producer, Jesse Houston: "there will be a lot of interesting races that you may not expect to be able to play as because they wouldn’t normally be looked upon as characters who are for the fight normally. That said we’ll be releasing more and more characters through DLC later." (taken from G4TV site).
Basically, they're making DLC races/classes, if you want Male Quarians in, everyone who wants them had better make as much noise as possible. That's the way getting stuff as DLC works. (the alternative is throwing a brick through Jesse's car window with a note saying "Male Quarians for ME3 multiplayer!" attached, but that would be both very impolite and would not be a good way of getting your point across)
