So I am wondering how will the N7 rating work in the full game. Obviously when you level up your classes it counts towards your n7 rating, but the question is:
What happens when you promote someone to SP and reset a level of your class/character?
-Will your N7 rank drop?
-Will it stay at the same level?
-Is 120 max level for the full game, or when you promote someone and level them up again you can get higher rank (maybe up to 999 lol)?

What do you guys think?
We are going to speculate, because I doubt the devs would answer this.
Also sorry if someone already asked.

It stay the same level when you promote someone and you can level it past 120. Confirmed. This is why the leaderboards matter, as they are currently moot.

One would suppose your N7 Rank goes up 1 point per unique level.

This would result in what...480 max level before new race/class options are introduced?

I wouldn't expect your level to drop, or gain an additional level after a promotion. It seems most logical for your N7 Rank to show your unique progression, instead of just spamming one class from now until kingdom come :3.

Ok so does actually each character/race level up separately? And anyone knows what the max N7 level is?

No. You level only the classes separately, not the class/race combinations.
