While I can see where you are coming from, personally I think that gender Bias is ok in certain aspects. Although Asscreed is not overly historically accurate (Aliens, Giant Octupus under venice etc) in those days a woman walking around with a sword was DEFINITELY going to get you noticed. While I'm sure that there were female assassins, and no doubt were some of the more effective, I suspect they may have been a little more subtle.
You don't have to like it, I don't really either, but sometimes it does make more sense for the protagonist to be male.
(EDIT) Just as in other cases it makes more sense to be female.
(/EDIT)Gears of War, on the other hand, would have been infinitely better if I could have played as Samantha Byrne all the way through. She's awesome. So is Claudia Black. Admiral Xen, Morrigan. If nothing else, I just love BW for giving me more of her voice.
