Seriously, if you look in the spoilers section ( Which this thread should be) you will see a reason for it.
But when they make James Vega buff, everyone goes " He's nothing but a meathead, wth Bioware???" If a woman needs to be ugly to be smart in your eyes, then clearly you're the superficial one.
And lets remember there is lots of gene therapy nowadays in Mass Effect. They could easily tweak women to be attractive. But whatever, I'm superficial because all smart women are ugly bettys while hot women are Snookies.

*sigh* ME really does seem to be someone's sexual fantasy world, and I think it totally reinforces the idea that video game players are all nerds incapable of getting laid. Yeah, I'm sure they'll try to justify it like they tried to pass off a certain race for something other than sexual objects meant to titillate the straight male gamer, but we all know why they did it.
Let me guess, EDI needed big shiny boobs because it'll make her more aerodynamic when she enters the atmosphere of a planet during some kind of high risk secret mission that only has a 0.0001% chance of success? <_<

I'll put it like this. EDI is more like a child than a super being. Her interaction with people allows her to grow with experience. Yes she understands how to fraternize and communicate with people, but the desire to be physically appealing is not something she would just pick up. She's ignorant of what "sexy" even means or the intricacies of human interaction at a sexual level. Sex is not something an AI would think about without enough exposure that they can understand it. Think about all her time in the Normandy including the years it took to develop her to that point and yet her communication with people is still not at a human level. Imagine all she would have to do and all the time that would have to pass in order for her to become curious about engaging in sex.

What you described originally was not a genuine artificial intelligence. Yes, she will be childlike in human understanding, but more like an exceptionally intelligent child. She would easily understand what is sterotypically considered sexy, even if she may be wrong on some of the finer points. She has a bit of an ego, in ME2 she likes to point out how awesome she is. She gets slightly irritated when Shepard is a jerk. The years it took to develop her are irrelevant, once she starts learning she develops her own communication skills. She wants to be considered part of the crew. Similar story philosophies have been explored from Frankenstein through to I Robot.
None of what you said explains how something that is completely ignorant about sex would suddenly want to become physically appealing to warrant sexual attraction from a different kind of being.

aesthetics =/=sexual appeal. At least not all of the time.
People may see the aesthetic value of Venus of Willendorf but I doubt people would find her as sexually appealing as Boticelli's Venus. Also sexual attraction is not entirely based on aeesthetics and there's the basic human element at play which EDI would lack due to the limit of what she's albe to comprehend at the moment the amount and depth of her interaction with people.

Minor spoiler, but EDI pretended to be a VI. Engineer Adams cottoned on, but decided to leave it be because Joker trusted her.
It's good to have a crew that trusts each other unconditionally. Lets you pull helpful-yet-not-strictly-legal things behind the backs of those in charge without having to fear someone pulling the rug out from beneath your feet.
