Im not sure if there ever was a topic on this, but yeah why if English is the language of the humans do all with the exception of the rachni speak English ?
At least have a few races speak a foreign language midway just so it shows that they have their own language.
Just curious.
Why all races speak English

The answer is that there are translators embedded in the omni-tool that are near perfect, this has also been mentioned in a way in ME2 during a conversation with Thane with the FemShep.

That's the in-game reason, the real reason is probably more practical - it's not easy to create an alien language that sounds like an authentic language, and creating such languages for several species would be quite the undertaking.
Not to mention that gamers don't speak turian.

They talk every so often about this in the three books (yes, there are only three books, just as there are only 3 Star Wars movies and only 3 Indiana Jones movies) and I thought it was some sort of ear bud that simultaneously translates. I think a few times Kapryshyn, if I'm not mistaken, even describes the particular sounds of of certain languages. They certainly talk about in the game how a human cannot pronounce certain Drell words.

Impressive things, those omni-tools. They must even adjust your eyes so the lip synch is near perfect too.

Yeah, in one of the Karpyshyn books, he mentioned how on Omega, there's enough different groups of different species speaking enough obscure languages that a translator can't even keep up or translate half of them.
