So like it can get very tedious keeping everyone's weapon/armor/mod up to date giving the annoying inventory system

That was really the only fault the game had
and why obviously it did not get carried over into Mass Effect 2

So here is a quick guide how you play but still have a challenging experience without every having to update squad-mates unless your giving them new armor

You only need to keep Shepard up dated with weapon/armor/mod

A. Set difficulty to casual with high assist

B. Turn off auto level up

C. Focus your points into armor/health and specialties
like hacking/electronics so you can grab better loot from locked chests

D. Don't put all your points into one trait spread your points around
you don't need to maxed out armor off the bat
you don't need to put say your assault rifle pass "sniper riffle unlock" unless you plan on actually using sniper rifles

Note: only max out a weapon later when you exhausted all other traits
Note: don't spend point on weapon traits for squad-mates
Note: always save you game before hacking segments

Why bother taking hacking/electronics for yourself? If you're not going to bother leveling up your squadmates' weapons, then have them do it. Then you can focus on more useful powers for yourself.

Having your squad-mates weapons traits leveled up
would be overkill on casual settings

You can only play as Shepard "you can't a be hacker/electronics experts"
unless you have a squad-mate who has those traits is in your party
so I'm a little confused at what your driving at?

I'll be honest, I'm confused about the point of your plan to begin with. So the idea is to avoid the inventory system by simply leaving your squadmates with the starting armor and weapons, right? But that would make harder difficulty levels impossible, so the idea is to turn the difficulty down so it's still a challenge?

I guess I just don't see why, if you're trying to avoid the inventory system, you'd also cut out all the leveling up and powers. If you really wanted to avoid the inventory system, then why not just play on normal and make extensive use of your squadmates' powers rather than their weapons (which will be crap because you're avoiding the inventory system)? I guess I just don't understand the reason for playing on casual or not leveling up your squadmates' powers.

Second time around I kept some rank VII tungsten and shredder ammo and aside from that progressively started turning everything, even some IX and X stuff, into omnigel. Because you keep nearly all your goodies from the first playthrough you're only upgrading for a fraction of the time on the second. Before too long money becomes unimportant enough that you don't need to worry about keeping stuff back to sell, and once the whole squad's got Predator L/M/H armour and rank X Spectre weapons plus a few Serrice amps and omnitools for the biotics then inventory management became no more than remembering not to turn the small number of rank VII stuff into omnigel in the periodic clearouts.
