I'm trying to get rid of my companions (except for One of Many) as soon as possible. But I don't know how. I can't target them with the Devour Soul feat. I used the console to reduce influence to negative numbers and then spoke to them, but nothing popped up there either. Is this a bug or am I missing something?
How exactly do I devour my companions?

If you don't want to cheat: I think you have to wait until they turn hostile at certain plot points due to choices you've made.
If you want to cheat: You could always try using the console to turn them hostile directly. Then you can reduce their hitpoints in combat and use Devour Soul on them to get their essences.

What points would those be? I know for Safiya it's after you kill the Founder, and I think for Kaelyn it's at Eternity's End, but only if you choose to defend the city, which I will not be doing. I don't know where Gann's would be though.
Also: just in case, what is the code to turn them hostile?

Perhaps if you choose to kill Gann's mum, and your influence is low enough with him, he might turn hostile? That's the most logical place for it to happen.
I'm only assuming you can devour all the companions at some point (other than at the end of the evil plot path) so that you can get all the essences to craft the 'amulet of betrayal personified'.
I recently used the console command to turn an NPC hostile in a module I was toying with, to check her combat prowess. I can't remember it off hand, but it was easy to find when I listed all the console commands (it might be one of the DM commands).

If you devoured Myrkul's essence and decided control the hunger, you'll get the Spirit Extract feat and all of your companion -except One of Many- in the moment will turn into hostile.

Speaking of Safiya, if you bring her in the Skein and meet Gann's mother there first time, she'll always
possess Safiya. That's the moment you can get her essesnce and in this case, you don't have to kill the founder either.
