This is getting really annoying. I want to be able to quickly go to the threads where I've been posting but nothing is showing under my "recent activity." Why is this? I'm really tired of searching for the threads I've been posting under. Is there some other place I should be going to view my recent forum posts?

Your recent activity is showing your more recent posts. The "Forums" tab in your profile only shows topics you created.
Are you looking for this? You can get there by selecting "Your Posts" from the "Jump to:" drop down menu near the top of every forum page.
