Because they don't have to give us an answer for anything, all that care about now is our money. Manly because they know their last 2 IPs flopped DA2, SWOTOR, and possible ME3.
Swtor floped? Evidence?
I'd like to know this as well. From what I hear TOR is actually doing quite well - which may be why they're implying they may continue Mass Effect in some form of MMO...

Obviously we want some answers. Why cant we get any? Why is it in one of the most important times of the series they go silent to fan outrage?
A: The game's not out yet.
B: How could they answer concerns about endings without spoiling them (and why would they want to describe, in text, scenes from a game they've worked hard to produce when the best description is actually to play it)
C: They don't want to add fuel to an uncontrolable rage of a fire.
D: They're not here to sell a game to you, if you've convinced yourself not to buy it, don't buy it.

As of now, the major gaming sites are still on cruise control and reviewing the game, so they haven't noticed the brewing storm yet... it's clearly in BioWares control to keep this going as long as they can, so that sales will be good.
I expect the first official statement to hit only a week after launch, when major gaming sites have picked up on the fan unrest.

By acknowledging the concerns, be they through reassurance or apologetic means, they risk losing sales from disgruntled customers. As it stands the majority will purchase the game if only to see whether their is even a linger of truth to the claims made. BioWare undoubtedly wants to be certain this ideal isn't jeopardized because it would negatively influence their bottom line.
That aside, what good would it do them to response? If they attempt to justify the ending or cite we lack all the facts, people will question them and think it suspicious. If they embrace the current rage, it informs everyone they have green-lighted a game not fully developed. God help them if they confirmed DLC ending. If the From Ashes DLC arose hostility. I can only imagine the backlash for ending DLC at this time. It practically screams for the masses to claim it was removed content so they could profit. Lastly, if they genuinely assumed people would settle for these endings... well BioWare, you ought to reevaluate your fanbase.
Alas, they are damned if they do, damned if they don't. The latter just makes them more money.

At this time. However, it may well cost them a large chunk of their fanbase, because "trust" is not that an immaterial thing in video gaming. Costumers are fickle, you lose their trust, you may well be looking at being the next casualty of EA's long history of dismantling development houses they have bought up.
Anyway, I expect developers to start talking about the fan rage at the soonest one week after launch.

They thought the suicide mission was a good idea at the time too, but look how that turned out.

They hate us.
I realize you were joking, but I am starting to wonder. These endings seem almost custom designed to completely end the serious without any (realistic) head-canon or head-fiction, and seem almost designed to give the fans and their favorite characters and tropes the proverbial middle finger. I find it difficult to believe this was an accident.
I am starting to wonder if BW/EA is tired of catering to a very picky and cantankerous RPG audience that Bioware has had traditionally and is in the process of firing the lot of us. If so, then 'grats. It's working.

However, I'll this as well: the game, ME3, apparently, ends with several endings which all are open endings, it seems. Meaning that we don't know what is the fate of Shepard or the crew or Earth maybe, too? Narrative or story wise this a great way to set things up for either expansions or dlc...
