If you don't like using potions/consumables I recommend using Shales Rock Aura.
Mana potions (and cooldown timers) aren't fun

Hmm, it seems I must be doing something right because I always seem to have enough mana for a fight, stamina is a bit of a different issue. I don't seem to manage that as well as I do mana.
I just pace myself with spells. I only cast when really needed like with a debilitating spell here and spike DPS on a boss there, a heal or buff as required, otherwise I stick to shooting the staff at the main tank's target to help conserve mana.
I've steered clear of most AoE spells because I don't manage those all that well either and I stick to the buffs. Although none of my mages are very high level yet either so that may play a role in it.
Edit: Oh, I try to take Mana Tap early too. That helps but you need to be facing an enemy caster for that to be useful.
