If Liara was my love interest in ME1, can I renegade bang Jack, then do the Liara mission right after Horizon, and finally do Miranda before the final mission?
Or will this not work?
Romance Jack, then Liara, then Miranda?

Liara bang (cant decide which love interest I want as my canon file so did both)
I see no reason why you couldnt invite Liara up to the normandy like you said, I just did it afterwards. Its a pretty good scene I thought.
