The Sword is everything that he is. It is more important than his life. So in the panic, even know he know the farmers were not lying to him about not having it, he killed them in attempt to get them to "talk."

It makes sense being attacked and left for them by darkspawn and all. It seems a little out of character for him to go on a murder spree even in a blind panic.

You don't just 'get better' from that though, and sense it's never mentioned as a possibility, I doubt it. The fact is we don't know Sten from before he did that, I got the feeling he was really keeping himself in check afterwards, cause their is deffinitly glimspes at a really large temper under that emotionaless exterior.

It's just a possibility. Some people do recover and gain immunity I believe. The shock of what he did may have brought him back to his senses.
As for mentioning it, Sten never would. It wouldn't change anything.

The Warden's drink is not just the fresh dark spawn blood you gathered. That blood is just a catalyst for the actual full potion. It is my guess that the fresh dark spawn blood quickens the true blood inside the potion and nothing else.
I think the Warden's immunity is because their taint is a far stronger taint.

He says if he were to show up and give his report to his superiors about the darkspawn (the reason he was sent to Ferelden) he'd be killed as a traitor because he didn't have his sword. The sword is a symbol for everything that he is. No living Qunari would willingly give up his sword and still be alive.

Get your influence to over 25 (Give him paintings, if you didn't manage it via dialogue), get the quest off him, visit Lake Calenhad, Outer Orzzamar, and Redcliffe.

At the very end you talk to all your companions, when your conversation is done with Sten try speaking to him again and he will give you that line about the cake.
