I have just advanced to 14th level as a mage, which gives me a second specialization slot. I see that there is a potential arcane warrior specialization available, but I haven't unlocked it yet. Is it possible to either delay levelling until I acquire it (but continue gaining experience and even future levels to assign when I do eventually level) or better yet to level but not assign my specialization point until later?

you can assign the specialization point at any level up. so yes, you can save it

On my first playthrough as a warrior, I hadn't unlocked any specializations at around level 13 (or none that I wanted in any case), so put it off. You can do the same with attributes, skills and talents, eg. if you want to get all the level 12 passive dw and warrior talents as soon as possible.
