Do they always get destroyed or is peace the only way they can be saved?

You can side with them and kill the geth, you can side with the geth and wipe out the quarians, or you can get peace and have both

How do you get both to survive? Is that even possible?

Yes but you have to get 5 "points" I don't know exactly what they all are but basically they involve: Don't let Tali be exiled in ME2, If you're a proper player you won't have to worry about this, blow up the heritics: it is possible rewriting them though along with other things.
If you play a full Paragon and complete everything Quarian related in ME3 and ME2 with their optimal conclusions you can easily do it. Provided you have high enough Paragon. I managed it every single playthrough. :P
You have to have an imported ME2 save I believe however.

Yes. There are many factors which include:

Activating Legion
Doing Legion's loyalty mission
Save Tali from Exile
Save Admiral Koris
...and others I forgot.

There are a possible of 7 "points" you can get in ME2 and ME3. You need 5 points  to get the peace option. Peace is only possible if you played ME2 I think

First off, Legion and Tali must be alive, and you must have done their loyalty missions

Tali not exiled" 2pt
Destroy Heretics 2pt
Tali-Legion Loyalty Conflict solved 1pt
Save Admiral Koris 1pt
Geth Fighters mission 1pt

Then you must have enough Paragon or Renagade score.

Then again, Shepard can survive that ending, and he is more cybernetic then them, so they should be fine

I see. In my first playthrough I decided to hold off on rescuing Korris until after destroying the Reaper server. I should have done that first. I'll go back to a previous save game and do the Quarian/Geth missions again.

Just a note. If Tali dies in ME2 then no matter how many points you have you CANNOT save the Quarians

You can kill the Geth and save the Quarians so they can starve to death on Earth.

So yeah, the best choice is to kill the Quarians and save the Geth but than the Geth die in Destroy!

So really, everyone dies. That's the moral of the story of ME3.

I'm not a God and I will not force Galactic life upon one path and closeing off the others. Everyone des, but at least the next races that gain sentience wont have to know about how bad Shepard failed to stop the Reapers or what a Reaper is.
