After rescuing Eve from Sur'Kesh, had a conversation with Mordin on the Normandy.  During this, Shepard asked him what he plans to do after this is all over, and Mordin replied "Maybe go someplace sunny, sit on a beach, collect seashells."  Shepard said he'd go crazy within an hour, and Mordin responded with this gem:

"May run tests on seashells."

Don't know why, but I literally laughed out loud at this.  I've been finding little gems like this all through this game so far, and I'm loving it.

The Liara "I am Yours" line gets me teared up too

Pretty much all the goodbyes are really emotional.
For some reason I think the Javik one is really emotional as well. He is a realist and rarely shows much emotion in the game, then at the end he's begging Shepard not to let him go with the Normandy.
