Ive gotten it already but probably will start a new game soon and was hoping I might trigger finding the meteor metal ore a bit sooner than I did this time around.
What triggers the Meteor Metal Ore cutscene?

I had the impression it's part of a "plot random encounter" like one you will/have run into in Denerim....?

As far as I can tell...its random..I haven't been able to tell any event that helped trigger it..

It's random. I've gone through an entire playthrough without seeing it. And others I've gotten it as soon as I leave lothering.

I have found that walking to and from Warden's Peak seems to trigger it.
Random encounters only happen once and they usually happen after you have completed some other aspect of the game.
With that in mind, if you travel a few times from place to place, you will not get any of the same encounters so after a while, logic would figure that you run into it.

It ALWAYS, and ONLY trigger when you are going for Honnleath.. Or whatever it's called. The place where Shale is

No. It doesn't make any sense seeing as they are part of 2 different dlc's.

Uhmmm.... I think I got this far earlier than that, but I won't argue too much with you... I did the Warden's Keep before Shale, and IIRC I had the encounter either when going Warden's Keep or even before that.
But the last week is a blur both game-time and real-time, so I really couldn't say for sure.
