The obvious tank for a good party would have to be Ajantis... the guy is a paladin. I’d take Alora as my thief and let Dynaheir be the mage... this gives you three Lawful Good characters that don’t care how high your reputation climbs.
Warning; each to their own but I don’t recommend Minsc (especially in no-reload) because he is just as likely to attack you as anyone else... it’s a little better in bg2 because Keldorn can talk him down.
My last playthrough was as a Sorcerer... now what?

The warning about Minsc applies to using his rage ability - there's no reason why you can't take him, but just not make use of this.

I never had the collector's edition. I was a late-comer to BG2, about 9 months late. I wasn't new to AD&D, though, so that helped. I've never seen Joluv in my entire life. I do not think I have him. I have two copies of BG1 and BG2. My original discs from the very old days, and my more recent DVD version I got from Amazon.com that has both BG1 + TotSC and BG2 + ToB (p.s. the BG1 disc and TotSC disc need to be swapped, it seems there's no escape from the retro-disc-swapping days). For BG1:
Actually, neutral characters don't leave you because of high reputation, but they can leave you due to low reputation. When it comes to effective party choices, Imoen and Coran are propably the best thieves (with Coran also being an awesome archer). Kivan is propably the overall most effective character, especially because ranged weapons are really powerful in BG1. For tanks, my personal favorite is Yeslick, but Ajantis, Khalid and Minsc are all fine - however, you should get them the gauntlets of dexterity (very important, you get them at gnoll fortress), full plate + a magical shield, ring of protection, belt and boots with -piercing weapons armor etc. It's generally a good idea to focus all of your best defensive items on one character and keep the other ones at range.
For Mages, you actually don't need one if you don't want to have one in BG1, but it's very nice to have one for using wands. Dynaheir has the disadvantage of not being able to use enchantment spells, but is good otherwise. However, the best good mage is Imoen, as you can dual-class her to mage and she has no disadvantages to speak of. You can dual her at level 6 or 7, or earlier if you have another thief. Also, clerics are very powerful in the first game, especially if you play unmodded (making skeletons much more useful).
If you have trouble with basilisks and sirens: Green protection from petrification scrolls or the mage spell of the same name allow you to deal with basilisks - also, skeletons don't get turned to stone as well. Sirens won't charm skeletons either, and you can assist with ranged weapons - or simply use the greenstone amulet (buyable at Ulgoth's Beard) which has 10 charges to protect you from charm etc., or let Minsc use enrage (making him immune, too) and let him kill them solo.
For example, a possible really powerful party would include:
PC (Fighter)
Yeslick (Fighter/Cleric, with good equipment an excellent tank with the VERY nice bonus of divine spells)
Coran (Fighter/Thief, great archer, can also be used for backstabbing or general thief abilites)
Kivan (great archer and also good in melee combat)
Imoen (dualled to mage - if you take Coran early on, you can dual Imoen as soon as possible if you want to, but you can do it later at well - don't worry, if you have at least one active thief, there are enough potions to improve thieving abilites)
Branwen (or any other character you want to add, for example an effective melee weapon user like Minsc - I prefer having at least two divine spellcasters in BG1, because their spells, especially summong spells, are very effective, and so is the wand of heavens)

Would you believe I've been awake since my last post, playing this blasted game? It's true... how long has it been now? :-(
I freaking suck at BG1. I can't keep up with all the quests, nothing is marked on the map, it's a real pain... my entire party has become archers. Also, Dynaheir is the worst mage I've ever seen. I probably should have gone with my first gut instinct and rolled a bard to turn into a Blade later, but something tells me I will die horribly, a lot, in BG1 as a bard, anyway. I also don't know where to find these NPCs. At this point, I don't even care if I play the game "canon". Minsc with the +18 dexterity bracers + shield + magic sword = heck of a tank, but Dynaheir is atrocious. No wonder she wound up dead in BG2. Someone probably sneezed on her. Jaheira's pathetic dexterity is so sad, she just stands in the background throwing rocks at people. Khalid is a sad, sad excuse for a fighter, too. I'm starting to wonder if BioWare got drunk and thought it would be hilarious to throw in a bunch of worthless NPC companions with lousy stats and low survivability rates. *pukes*

The BioWare NPCs aren't that bad. If you're new to BG1, you'll propably die with ANY given combination of characters - it happened to everyone here. It's also pretty much impossible to make a mage being able to survive any kind of melee combat or being shot at - which is why learning "armor" (or "shield") and "mirror image" (und using them) is propably a good idea if you want to have a mage (as I said, you don't need one, but it's nice later on, espcially for wands). As for Dynaheir, she actually has the best constitution of any BG1 mage, but to improve her AC you'll eventually want bracers of ac (the best you can find) and if you have a lot of money a robe of the good archmagi (at high hedge). Also, if someone shoots her, call her back immediatly.
Khalid isn't that bad either, but since you got your good equipment on Minsc he will always be underequipped - one melee fighter is enough.
Jaheira starts being more useful if she gains summoning capabilites or call lightning. Also, with the Quarterstaff +3 from Ulgoths Beard she's a decent melee damage dealer. Still, druids aren't even slightly as good as clerics in BG1. As for map-markings, the Baldurs Gate Triology mod can add them if you truly want them.
As for where the mentioned NPCs are:
Kivan is at High Hedge (~NE of the building), Coran is in the first Cloakwood area (NW), Branwen is at the Carneval (you'll need a green stone to flesh scroll to get her) and Yeslick is at the Iron Mines (you'll run into him automatically, but, like Branwen, he won't have equipment, so if you plan to take one of them you should bring something (heavy armor, shield, war hammer, helmet, sling etc.) with you (though I wouldn't take Yeslick if you don't plan to give him the gauntlets of dexterity, and if you like Minsc you won't need another tank).
Ajantis is at the Fishermen Village north of FAI (S). The other characters you haven't met so far are propably not that great, especially for a good party, though I personally like Faldorn (3rd Cloakwood Area) and Quayle (entrance to Baldur's Gate, you'll propably hate him).
