ME2.
I played it first so maybe I'm biased as it's the game that introduced me into the series, but I instantly connected with characters like Mordin and Thane (my two favourites) and I love 'em to death. For me, playing ME1 and ME3 without them in my squad feels so wrong, but the story is so great I just kinda deal with it.
I liked how ME2 handled the story progression. I guess it's because I don't like surprises, but I liked how much control you had over everything. Everyone you put effort into could survive the suicide mission. Unlike ME1 where you're forced to choose between Kaidan/Ashley (which was fine) or ME3 where you lose a few former squad mates without being able to do anything about it (I don't really mind "One or the Other" types of choices though. I didn't like how a lot of choices were more like "One or both" lol). But I get that they were going for a "this is the way it has to be" sort of vibe so whatever.
Basically, ME2 had a huge variety in characters which is very important for me. Characters that if you didn't like, you didn't have to pay attention to. And if you did like, you could go and chat with anytime you wanted even if they didn't often have anything new to say. I don't like the lack of choices for squad mates in ME1 or 3. I understand it, but I don't have to like it.
Bottom line: ME2.
