Oh, it happened. It's just that with the course of history, Shepard's story has been twisted. Or parts of it were taken out or altered to make a suitable story for his grandson.
Don't like the endings? Grandpa made them up, or was wrong about the details.
Don't like the romance conclusions? Grandpa wanted to censor the steamy reunion scene.
Don't like any other random things that happened? Grandpa got it wrong.

Interesting thought though...
If "A**hole Grandpa" actually just told this huge story to his grandson, where did he get all that intimate, detailed information from? That would be a little too accurate to be passed down as a legend.
It could mean something significant....
or it could mean that the ending is entirely weak and shouldn't have even been there in the first place. *shrug*

But that's just it!
There was no one close to him at his final few moments other than Anderson who was shot in the gut and bled out and TIM who topped himself.
How would Grandpa know about all that?
Which is why it reeks so cheaply.
