I have heard alot of the side missions will dissapear if you wait too long and advance the mission.  Have also heard that about side missions involving your old crew.  Does anyone know if this applies to the N7 missions or can you just save all those til last right before the Cerberus base?

There's a mix. Generally, you should assume that all your missions will be wiped between "Priority" missions. Finish all the sidequests before going to the next "Priority" mission.

Additionally, there are missions that have a maximum number of side missions that can be done after opening before they're marked as failed. Those are usually obviously time-critical: things like the bomb on tuchanka, or the crashed admiral, etc.
