So far I've been scanning planets just for the missions that require you to find things but I noticed you can scan things and find stuff like ships, etc. to help with the war asset rating or whatever

Yeah, I think so. Especially because (if I remember correctly), the galaxy gets progressively more Reaper-controlled as the game progresses, so I'd say planet-scan early and often. More assets are always nice.
