you spend so many years developing this character, making the choices that make the character yours, choosing the love interests, be the ultimate hero or bad ass

Mass Effect 1 you survive no matter

Mass Effect 2 you survive if you make the right choices

Mass Effect 3 you dead irrigardless BUT you get to choose how! Terrible!

Game is not complete until you get a Happy Ending (If you make the correct choices) where everyone survives.

What if my hero isn't going to except one of those endings?  What if my hero would rather talk some sense into the Catalyst, and postpone the Cullings until Organics are threatened (Near annihilation) by synthetics, using the Peace between the Quarians and the Geth as an example (or Choice Prerequisite) as well as the Friendship or Love interest between Joker and EDI (wouldn't be as important BUT would certainly count towards the good ending)

No he/she can die in any instance if fact I suspected that, I just want my decisions over countless characters and hours played to matter, as it stands now with several imports ready I won't ever play again.

He/she lives in the aftermath of the "best" Destroy ending. But what happens afterwards, BioWare doesn't tell us.
