For my Infiltrator, I use the Viper-V rifle with either Shuriken-V or Phaeston-V as a sidearm.
I'll probably try out the Javelin if I get it.

The N7 Valiant is actually an AMAZING weapon (the N7 Sniper). With a damage increase mod, it does almost as much damage as the Black Widow, with a 3 round mag, higher rate of fire, low recoil, MUCH lower weight, and VERY fast reload time.
That said, using the damage-increase mod for the Black Widow makes it a higher damage sniper with 3 round mag, but there is still incentive to go either way.
I also used the Scorpion a lot--that thing was so good and versatile.

The Disciple is usually my primary on my vanguard, with a Paladin as backup for anything with armor. The Paladin, together with Carnage tends to melt any armored foe, and all in all the build is very lightweight. I also occasionally like to carry a Hornet SMG with ultralight materials. The mod makes the SMG's weight near negligible, while still providing a very powerful ranged solution, especially when ammo is at a premium and the target isn't in a valid position to be charged.

As a Vanguard I've been using the Revenant and the Carnfiex as my primary load out I may eventually upgrade to the Paladin.

Vanguard, I'm rolling with Indra V sniper (concentration and damage mods), Disciple V (clips and damage mods) and Carnifex V (damage and armor pen mods). My power cooldown is at +34%, and I can charge every 4 secs or so (I think, I don't really remember).
To be honest I probably don't need the Carnifex at all. A bit of a waste of weight. But I use my weapons more than I do my powers, except pull, I spam pull like anything. And I added Warp ammo. So it helps a bit. Disciple's good, love it a lot. Light weight, high enough rate of fire.
But I'm probably playing it all wrong =P

Honestly, any loadout with 3 weapons just seems excessive to me. Must be all that COD and Halo

Depends.
As I own the collectors edition (Which I question if it is really worth buying), I found that the N7 Sniper rifle and N7 Eagle are effective early on, as is the hurricane. I stuck with the N7 Sniper Rifle for a long time until I picked up the black widow. The particle beam rifle is a excellent weapon to use, especially for its prothean origin. Oh, and the carnifex totally rules, I never got the paladin from the spectre armory but I love it. Best weapon ever. It was great in ME2, and still is in 3.

Chakram and the Scorpion/Carnifax. I carried an SMG with ultralight 3 so no weight, but I don't like how any of them handle at all, just have it for back up if I ran out of sinks for the other two. But I do spend more time using powers than the gun, FWIW.

Rev, Raptor and the Hurricane for fun (with light weight materials it has almost no impact on timers). The upgraded Rev is the awesome gun I remember from ME2 and the Raptor is a great, forgiving sniper rifle. Also I just liked the way it looks and wanted to use one of the new guns.

I was really digging the Raptor w/ barrel and scope for most missions w/ my infiltrator. As mentioned it can pretty much take the place of an AR, w/ the added benefits of time dilation and being able to see through smoke. Paired it for probably the first half of the game after getting it w/ the Tempest then tried the Hornet but found it had way too much climb.
Started playing around w/ the Vindicator w/ the barrel and recoil dampener and liked the combo of it and the Raptor alot for more of a run and gun, close range, rolling in and out of cover style then the traditional camping sniper style I had mostly played w/ this Shepard.
By the last 5-6 missions I've pretty much been defaulting to the Vindicator and only pulling out the Raptor for true sniping opportunities and when I can't be bothered to flank the Centurions. Cooldown bonus is at +91% w/ this combo IIRC, so I can still do a fair amount of power spamming w/o waiting for recharge.

I always carry the Argus and the Paladin. If Husks are involved I will go for the Scimitar as well.
I upgrade the Argus with the scope and the stability damper. turns it into a pretty good weapon.
The Paladin I use with the piercing and mag upgrades. Don't use pistols often so low ammo is not a problem.

On my insanity run I primarily used a Mattock. It was relatively light weight, accurate, and packed enough of a punch to put down a couple of "goons" during each Adrenalin Rush. I understand that there are better weapons but this is what felt right to my Soldier and felt right in my hands.
Note: The Mattock served well except when I got to the last mission and honestly started running into some ammo problems.
YMMV.

ended with: revenant.

I played as a sentinel, and used the Avenger assault rifle and an smg with ultralight materials mod as a backup. With those upgraded my power recharge was at +200% and the Avenger was usually plenty of firepower (I had to pull out the smg twice in the entire game, briefly). I don't know if that would work well on insanity, though (presumably less ammo and stronger enemies).

I have to ask why I see no mentions of the Saber anywhere in this thread for ARs?
Thing one shots hell of a alot of enemies, including pesky Marauders, makes quick work out of more hardened targets, and I assume at least can still pull its weight even in Veteran at least for the high damage it puts out.

I set my solider for max damage, min of +10% damage on all armor parts
Geth AR damage & ammo mod with maxed incendiary rounds (with the little explosions) tears up everything. and don't think i have ever come close to running out of ammo 120+ (depending on how you set up bonuses) in a clip 622 in reloads

sniper rifle, mostly the N& until I get the Widow (1 shot kill) - i use it for log range campers.
but mostly my preference is the revenant LMG, I upgrade it with a scope and long barrel so when I'm up close I spray and instant kill anything and in mid range I use the scope and it's almost as accurate as sniper rifle.
