Wraith and Carnifex. It's kinda ridiculous that the Carnifex is better than 80% of sniper rifles at sniping, but hey, whatever works. And the Wraith is a godly CQB weapon for infiltrators.

My Vanguard used an Eviscerator with the Carnifex. After I got the Wraith though I just used that and let my powers do the talking.
My Soldier uses Blackwidow/Claymore/Falcon. I only use Ammo Powers and the occassional Adrenaline Rush with the Falcon. My recharge is like -200 but that's fine, I let my guns do the talking.

I load up my soldier with everything.
In terms of actual go-to guns:
Vindicator is probably the best assault rifle in the game(especially if you upgrade it) in terms of spread, weight, and damage. Particle Rifle is cool, but NEVER use up all the ammo, cause then you won't be able to shoot it for like another ten minutes(cool down time is ridiculous).
Phalanx is like the carnifex and predator's love child, so it rocks(especially with a scope attached).
Disciple is the lightest shotgun in the game and has decent damage, but the N7 crusader is the most accurate(it does't even have the shotgun aiming ring).
I currently roll only with the N7 Valiant, but that may very well change to the Black Widow or Javelin in the near future(most likely Black Widow, based purely on nostalgia for the non-black original).
No real opinion on SMGs, never really used them much so far(though the Hornet is totally boss).
And my flame-shields for including CE-exclusive weapons are up, by the way, so rage all you want, I'm protected from the ****ing(they'll probably be released in a weapon pack in about three or four months anyway, that's the way these things almost always work).

I finished my first (soldier) playthrough with the Black Widow V (extended barrel 5 / penetration 5) and the Falcon (extended barrel 5 and the extra ammo mod, forget what level).
The Falcon truned out to be a pleasant surprise. I had feared it would be a bust along the lines of the explosive ammo mod in the first game. In reality though, I found it pretty ballanced: it's powerful, can affect multiple targets, and when used with a little care may be effectively fired from the hip. Best of all, it all but trivializes most sub-boss encounters up to hardcore. Empty a magazine into a brute and watch him go down.
I struggled with whether to go with the Black Widow or Widow classic, intially finding the former to be a little disappointing in the damage department. For those who can score multiple headshots in a single time dilation, however, the BW pays off by stacking multiple bonusses. Play a soldier, with all variety of ammo possibilities. I use the Indra (ammo and... still deciding on the second mod.) and the Prothean Particle Rifle (ammo and armor piercing mods usually. Easier to shoot from hip than scoped, and accuracy/recoil are completely irrelevant. Might use the damage mods once I crank that up to higher levels. Also, for those wondering why I'd use ammo on an 'ammo-less' weapon, it increases the duration it can be active, time it uses its large blast, and provided you don't over-heat and just do a 'cool recharge' it seems to increase the speed slightly, though that last bit may be my imagination). I also always preferred the overheat system. It was/is just a different playstyle.
Together, being a soldier, these two are basically an "I win" button.

I restarted my game,but my current go to weapons are the Particle rifle, The raptor and the Shuriken smg. fully upgraded and I still have a postive charge for my powers. Will switch the raptor out once I can get the Black widow.

So for my second run with my Vanguard I've switched over to the N7 Valkyrie and Scimitar. Valk gives me good, ranged power to punch out shields and turrets, and the Scimitar's semi-auto is working wonders in conjunction with the usual Vanguard tactics. And they're upgraded enough that the weight doesn't affect my cooldowns too much.

Black Widow, primarily. It's just too good not to bring - enough damage per shot to kill regular enemies if necessary and probably the best burst DPS of any weapon against minibosses when factoring in tactical cloak. The only real downside is the heavy weight.
Hurricane is my favorite secondary weapon, and my favorite squad weapon. It's fun having an insane fire rate weapon with cryo ammo on squaddies. It can also be reduced to almost zero weight with the ultralight mod, making it practically a free backup weapon.

N7 Valkryie has served me good, especially leveled up with a stability dampener and then either damage/capacity mod.
Black Widow for long range. That is soldier.

I prefer the Mattock, myself, fitted with a scope, and either the hi-caliber barrel or a piercing mod as my primary weapon, coupled with the Phalanx with the hi-caliber barrel and a scope as secondary in single player.

For Infiltrator I used the Black Widow...3 dead guys before reload? Yes please. Im still experimenting with my Vanguard but I like the Disciple a lot, gonna try out the Crusader even though its super heavy.

The N7 Valiant has found a surprising home in my heart. Accurate, powerful, quick. And it looks fantastic. The Raptor is also nice, the decent damage with rich ammo reserves is a lot like the Viper from ME2. Couple it with a Concentration Mod and a High Caliber Barrel, it works for everything.

M-358 Talon with capacity and damage mods. I am praying I unlock the wee beasty in multiplayer. As a vanguard, that thing is the Mass Effect equivalent to the MIB "Noisy Cricket" with the considerable bonus of near-instant power recharge. Makes taking out Cerberus Engineers and their turrets so damn satisfying: charge in and nova the turret to death, then knock the crap out of the engineer.

Mattock with Engineer. Katana -> Eviscerator -> GPS on Sentinel. Probably will do Adept next and he'll be using Predator -> Carnifex.

for vanguard: graal spike thrower. Any problem that a vanguard might have is shored up by the spike thrower's ability to work at all ranges

As stated by many others: Black Widow for Infiltrator alot of times can take out 3 enemies before a reload on hardcore at least

I used the Chakram Launcher on my first Insanity run through, and it was an absolute life saver.
After messing around on Normal, I found the Saber to be better (because you do not have to lead enemies, and depending on how you set up your class it can one shot Troopers without AR as a soldier, Centurions in 2 shots, and will wipe an Atlas mech in less than 3 clips).

For my money, nothing still beats the Widow, even on insanity you can still pop off head shots left and right for one hit kills. Just a shame you don't get it until so late in the game.
