I saw some video files inside the Movies catalog of the game like End01_Sword*.bik . Are they cut-out content or did I just miss something?

They're just the various things you can have happen with the fleets arriving, being called off, and the initial engagement with the Reapers.

I never saw anything like that in the game. My game started immediately with the video of the shuttles landing.

Download bink video player and you can watch them all, without sound though.
