The thought of every species being stranded in the Sol system annoys me.
I prefer to think that like Joker and the Normandy, once the Crucible was activated all races made for the mass relays, effectively beating (hopefully) the detonation. If anything, considering this way of thinking, its more likely that the human fleet is stranded elsewhere in the galaxy. Its just too hard to think that the Quarians just regained their homeworld just to lose it again.
I'm actually interested in how it all works out from there. Interstellar communication already worked, and this was never said to be based off Reaper tech. Communication between worlds/colonies/fleet should still be possible. That wouldn't disappear with the mass relays.
At some point in the game, I also heard a pair of soldiers mention protecting a lab of some sort where they discovered how to jump FTL without Mass Relays. What's going on with that?
The "stargazer" ending doesn't tell us much.
I just hope there is a future for the Mass Effect franchise that doesn't resolve to prequels, and that doesn't stray too far from what we're familiar with.

FTL has always existed in the game. To get from Earth to Arcturus using FTL drive would take about two months.

uhm, i think the Soldiers discussion was about protecting an eezo-Refinery. And it went something like this: "Soldier, have you discovered a way for Ships to Travel FTL without having an eezo-Core? No? That's why we need to protect that Facility!"
and interstellar Communication sadly still made use of the Mass Relays (at least it did according to the ME1 Codex)

Communications using FTL comm bouys would. But the Quantam Entanglement Communicators that are used througout the game do not.

in theory, yes. But we don't know how many of those exist. Some were on the Normandy, Hackett was using some on his Command Vessel, and Anderson was apparently carrying some around on earth. I very much doubt that every Colony/Station was connected through them.

Still, it's something. I'm not sure why people are assuming that the death of the relays means that everyone is stranded forever. Seems like the folks that built the Crucible might be able to make some progress on re-establishing interstellar travel.

It's probably because so far only the Protheans have been able to build a working Relay (Conduit). Mass Relay Travel is from Point A to B. If you want to re-build the Relay Network, you need to build a Relay at Point A and then somehow go to Point B, build a Relay there and connect them to each other.
Personally, if i would have to headcannon something, I would let the Geth be the Saviors of the Galaxy. They should have the knowledge to rebuild the Network. And they shouldn't have that many Problems travelling around. Of course the "Destroy" Ending makes that difficult

Not in my canon, it doesn't. Because the Geth aren't actually destroyed. Everything Catalyst said was a lie, since it was actually Harbinger trying to trick Shepard into sparing the Reapers.
