I disagree.If that was the case, then all good stories should have unhappy/bittersweet/enter adjective here endings, and all stories who have happy endings are badly written.
I would be more inclined to say that happy endings fit some stories better than others, rather than dismiss happy endings generally as bad writing.
As far as a happy or sad ending would better fit Shepard's story, that is up for debate since it's clearly being discussed in a lot of threads with valid arguments from both sides.
So had they added both choices in the game this could have been avoided, most people would be happy, and we could replay and give different endings to different Shepards. In DA:O, sacrificing my human noble warden was a fitting ending for her, as was taking Morigan's deal and going off to the sunset with Alistair for my elf mage.
Basicaly, I don't see why Shepard's story should only have one conclusion.

Anything less and Shepard should probably end up dead, with the galaxy in various states of disarray, depending ont he EMR and choices made in game, with the worst ending being the whole "dark age of technology" (making Tracer Tong happy), and the best showing that with a galaxy united the reconstruction has already begun, and while old hatreds might eventually come out again, for now the galaxy is mostly at peace and will probably be for a while.

I want a barely managed to win, galaxy is in disarray and most of your team is dead ending (along with you maybe) that shows the state of the galaxy. (Races returning home and rebuilding, etc.)
I want a earth is devestated but can rebuild, you won, lets go have a party ending (because Earth HAS to be devestated since it has had reapers on it longer than anywhere else at this point).
BUT most of all I want everything after the reaper beam to be gone and something MUCH better to replace it. NO starchild dambit! No 3 buttons to end! I want the Catalyst to do something cool like Drop the shielding on the reapers and disable their network, allowing the ground and space forces to actually win in a conventional battle. I want the Relays and Citadel to exist no matter what and I want the people on the Citadel to still be alive in the good ending (maybe they were fighting district to district - killing the husks, etc. that were sent to harvest them). I had prepared its defenses so it should have been able to hold out.

That's what this is about ... we need truly different endings! This is what we were told was going to be in the game, this is what we expected when we bought the game, and this is what we expect to be given: what we paid for!

I'm not going to get a perfect ending, so why bother?
Perfect ending, in game design ensures that people who wants it hard enough will try to obtain it. If I can't have it, why would I try? Might as well play other games that at least sooth my ego and not make me depressed.

There is no reason why it shouldnt be one of them.... except... since it seems now that the ending is whatever you imagine, then every ending can be like that.
Just picture that Shepard got teleported into the Normandy with her squadmates, there, you imagined it therefore its real.

And to be clear, I don't necesserily want the current endings to go away (although i think they need to be re-written badly).
I mean come on - the catalyst controls the reepers for god knows how many cycles (they didn't tell us) to "harvest" organics and then willingly gives shep the option to destroy them wihtout doing anything to stop him / her? Not only that - explains exactly how to do it?
This story is fantastic - i think they should make a movie out of it - but this ending does not stand up to the quality of the narrative from the beginning and therefore is a severe disappointment and i think that has hurt Biowares reputation.
These endings do feel like they were "thrown in at the last minute".
In short, re-work the current endings with a little more thought. Add a happier ending as stated by the OP. Even if the galaxy is still destroyed - seeing shep reunited with his crew or LI is a happier ending than what we have seen. The current endings are all very bleak and leave you confused.
I don't even know for sure if the reapers were actually destoryed or if they won they day - assuming you buy into the dream theory when shep got hit by Harbinger before entering the beam to the citidel (which the clip of shep gasping for breath seems to support - the rubble looks like buildings not the citidel).
I dont think there currently is a "best ending". They all seem the same and they are poorly written with logic holes you could drive a space shuttle through.

It should not be the only option, but after working so darn hard and suffering through so much, I feel like my Shep has earned a chance at beach holidays and creepy/adorable turian-human hybrid babies.
Even if it's ridiculously hard to achieve and requires playing the game perfectly, I want that chance at happiness to be there.

And then I got Mass Effect 3's ending, and fell into a depression for a day or so.
