Since I'm a new player, I'm trying to figure out what are the "best" choices to import into ME2 and 3 to get the best "good" endings.
Which ones did you all go for?

Will you be playing Mass Effect 1 or just doing the interactive comic? If by "good" you mean "paragon" I'd say that the following is probably the most traditionally heroic Shepard:
Background: Spacer/War Hero. This nets your the biggest bonus to paragon points of any starting background. It's also the background that features the least "angst" (Personal favorite character, however, is an Earthborn/War Hero "Paragade")
class: Not sure if you're sold on class yet, but soldier followed by vanguard are the only two classes that make sense to me personally. I have nothing against the other classes, but they're designed as supporting classes. Just makes more sense for Shepard to be the best warrior and or biotic who's up front in battle.
Romance: Liara has always seemed the obvious romantic option for a paragon leaning character in Mass Effect 1 given that she's not as "hard edged" as Ashley (who, to her credit, is a noble and good character underneath). A character interested in her, by the very nature of her species, is probably going to be open-minded and interested in differences, not something that screams renegade to me. I will say that events in Mass Effect 2, somewhat astonishingly, might "flip" this thought process as to who is best suited for paragon Shepard...though not necessarily. I will say that Liara has been portrayed as the "cannon" romance in a Dark Horse comic series that I read if that matters to you.
Wrex: Save him. It's silly to let him die even if you're a pure renegade given that their is an intimidate option to do just that.
Council. Save them, obviously. This is the best possible position for humanity in a long term sense (even over a pure human council) in my opinion and makes the most sense for a paragon.
