Not only because she's awesome, but they did a great job in developing the character over three games.

Ashley is the most realistic. Two people of the same race in close proximity, both from the alliance ext. Also its not some butterfly love story. They actually interact like real people arguing and such.
Miranda is also a decent choice for similar reasons. However shes so headstrong and determined in other directions that make me think its the sort of thing that would never work.

Tali is charming and has a great soul but Liara's humanity really captured me in ME3. I plan to replay from the original with her as a LI sometime.

Persoanlly though, its Tali. Not only cause I think her character is incredbily cute in the way she approaches things, but also her interaction with other species is the most amazing concept to me. To live your life in such a secluded way in such an expansive galaxy, its an incredibly depressing notion (to me, at least) - I felt her need for personal contact the most gripping. Also they paid her story *waaaaaaaaaay* more attention than the majority of other romances so that helped flesh things out for sure.

Same situation for me. I bought my 360 in July 2010, and literally knew nothing about the Mass Effect series (except I actually bought my 360 for ME2). I did one playthrough, not really understanding how the game worked, or any of the background. So naturally, I went aftet Miranda; the typical hottie with all the standard features.
Then, as many of you also have done, I took a chance with a young Quarian named Tali'Zorah. And the rest is history...
Drama aside, I absolutely think Tali is the most interesting LI in the entire series. For a variety of reasons I don't feel like elaborating on.

Add in a kiss and substitute 'siha' for 'Shepard', and it's the same as the friendship path. Nothing really changes.

I had a problem with Ashley ever since how they handled her in ME2. I could understand the distrust and the sense of betrayal, but I *really* did not understand not sticking around long enough to even talk about it for more than 5 seconds. That just seemed....incredibly unrealistic. Especially given her sense of duty, and her loyalty to the colonists (that she just watched you try and save while she was helpless), she turns her back on all of it - that was the death of her character to me, and ME3 did not do nearly enough to win me back (they treat her like a second-rate character with the amount of cutscenes available on-ship, at least that I managed to find. Granted, I had cut it off with her, but still, she turned into a black hole of Cerberus hate with nearly no personality, when she wasn't drunk on the floor)

J.K. I like that you can have a major, yet believable, effect on her. Not to mention she is, in my opinion, the funniest and most attractive of the LI's.

That said, to me it's sort of a three way tie. Liara, Miranda, and gay Kaidan.

For me, she was always the one character that developed the most throughout the games.
In ME1 she was the nervous, occasionally babbling nerd who had a strangely alluring side to her.
In ME2, what you see of her has now become a very strong, confident and quite often brutal woman because of what she's been through, yet that tender side of her remains intact.
In ME3...she is perfect! There's nothing you fault her for. Intelligent, commanding, her biotics are awesome and she's unflinching in battle.
She reminds me of a Valkyrie (not the gun, the warrior woman).

Canon Shepard's LI: Liara
Extra Shepard 1's LI: Tali
Extra Shepard 2's LI: Ashley
My "favorite" (biased due to playing mostly the same Shepard since the past four years or so) is Liara, especially thanks to the Shadow Broker DLC which made me like her even more than prior to its release.
