They don't become synthetics, organic and synthetic life is merged down to the genetic level, hence the catalyst saying, "a new type of DNA". Its a whole of lot of scifi nonsense, bu then so are Mass Relays and eezo powered FTL drives.

Mass Relays are far more firmly grounded in reality than a green beam that simultaneously changes the fundamental molecular makeup of every living being in the galaxy.

I'm more concerned with whether or not this means I can date a Quarian without having to worry about stuff like "immunodeficiencies" or "incompatible genetic makeup".
