Yes. In Mass effect series, bioware have done a very good job to create each one of the characters and made them all feel so real and so human. We all grow a emotional attachment to them now. As I recall, when illusive man's Dr Eva tries to kill Ash, I went like "NO~!!!! That's it, illusive man!! I am going to hunt you down and cut your ba*** off and sell them to a Krogan!!"
That is why we all want a happy ending for them.

Or my favorite:
When the victory is near, a scene where you can see Grunt in melee combat and Garrus with his sniper rifle counting Reaper kills like in LotR.

Catalist can provide an option to deactivate all Reapers. Shepard and Anderson will be rescued and stay alive. Reapers will become inactive and harmless. But galactic civilization will be completely responsible for everything it will do in the future.
...Or something similar. Like deactivating Reapers from the Citadel not via Catalist's dialog but via some console. I think BioWare can make a DLC with couple of missions where Shepard learns that Citadel is a hub for controlling all Reapers, and learns how to deactivate them... Anyway, I'm sure there must be a happy ending among all other endings. It's an RPG after all, remember?

Right now our choices are three different colors of suicide all with a free side order of some form of geocide. It makes the whole ME experiance unenjoyable knowing it ends like this.

It suppose to have 16 different endings. I am sure they can satisfy all of us if bioware really commited to change the ending.

I expected options, yes. Self-sacrifice being one of them.
I expected an ending like Jeremy Jahns describes, , Garrus and Sheppard sit on a beach like Garrus described earlier in the game and overlook a dead reaper corpse and they say 'well, it's going to take some work, but we took earth back', and then Krogan and Turians shaking hands, etc. etc. and then resolution with all the characters.
THAT is an ending.

But in ME2 you can keep all your squad alive....even thought it's a suicide mission...I don't see why not implement something like that in ME3 aswell

When I started playing ME3 I never expected my Shepard to make it out in one piece, not like she'd have limbs missing or anything - but I did not expect her to be "okay" after everything she's been through with ME1, 2 and finally 3. Not having an LI to lean on I imagine would make it emotionally harsher on her.
I thought my Shep would survive but be left with some serious issues that make living...difficult, at the very least.
What I did not expect was for Hackett to suddenly go "It's not working!" and God!Child to come out of nowhere. Then the multiple endings "choice." One of my friends was so in shock at this point that she just walked in a straight line and got the Synthesis ending; not that it mattered by a great deal.
The multiple endings thing could have been incorporated differently, but I already covered this in writing over here.
They could have done it in a different manner. I never expected rainbows and daisies Bioware, but neither did I expect to have to choose whether my pill is cyanide, arsenic or a nice dose of anthrax.

That "simple happy" ending could be combined with a "dark Sci-Fi" Control ending, where the Shepard-Reapers are god-machines which help rebuild galactic civilization. The geth (if alive at the end of the game) are integrated into galactic civilization. The entire Normandy crew, including Joker and EDI, is rescued by a Shepard-Reaper.
Synthesis could then become the "cosmic enlightenment" ending, where the mass relays and Citadel are rebuilt. Shepard's LI reflects on how Shep will always be a part of him/her.
