I always start out as a soldier for my first playthroughs cause it just seems right but now I wanna have more fun

The Infiltrator has tools for every enemy type.

I played Hardcore for my first playthrough and used Energy Drain as my bonus power (strips shields, barriers), Incinerate (armor) and Cryo Ammo (squad effectiveness upgrade 5). Nothing could stop me. It also has Sabotage for Geth, Armor Piercing Sticky Grenades for Brutes / Atlases, and can cloak / one-shot snipe basically anything in the game.

Biotics looks much more fun again, I'm playing an adept next (did a soldier PT first, like you).

Gonna choose adept on insanity, any good build recommendations?

For an Adept you'll have to take Energy Drain skill. It is an overload alternative, but more powerful.
