Glad you're interested - I'm biased, but I think there's a lot to love about the game.
Couple suggestions: there are rough mage equivalents (known in-IP as biotics). The "pure" mage class is the Adept, and there are a couple of mixed classes that have mage/biotic elements. Here's the list of
classes. I haven't played the console versions of DA:O, but my understanding is that they use roughly the same system as ME - a radial menu to activate skills/powers. With an Adept in ME, you can aim while paused as you select a power. The only downside is having to keep the radial menu selection button depressed (although there may be an option to change that, I'm sorry to say I can't remember).
If you want to play as the warrior (Soldier in ME) class, you can still aim while paused, but that could be a bit...tedious. I've seen at least a couple of people claiming to use this method though, so it has been done. Avoiding the Soldier is probably your best bet to get a non-shooter feel, the Adept definitely fits an RPG mage-playthrough style, and the mixed classes can give you a bit of both.
