I've done insanity on my Infiltrator, playing with Garrus and Liara as much as possible. Liara is great for CC and setting up headshots, while Garrus is great for taking down shields and barriers (the main weakness of the infiltrator class). It seems infiltrators have gotten a bit of a nerf since ME2 (fair dos, insanity in ME2 was ridiculously easy as an infiltrator).

I specced into added damage with tactical cloak, as well as cryo -> incinerate detonations. Garrus' AP ammo is incredibly useful for the final area where you are swamped by banshees and brutes. I equipped Garrus with a Widow X and a Revenant X, while I had a Black Widow X and a Locust X. Liara had a Locust X and a Paladin X. Banshees are a piece of cake if you equip the rapid-fire weapons with squad disruptor ammo -> Garrus overload + Liara warp + bonus power Energy drain to take down their barriers, then equip slow-fire weapons with squad AP ammo / cryo ammo (depending on which you prefer) -> Garrus proximity mine + Liara warp + tactical cloak headshot.

The other thing which is useful to note is that Liara's stasis is really useful for freezing Marauders / Centurions while energy drain / overload recharges.

I'd advise taking sabotage to max until Cerberus HQ mission (sabotaging turrents makes the engineer area a piece of cake), then respec to make sabotage the un-maxed skill. Doing that, I died about the same number of times on insanity compared to a normal playthrough.

I have an adept I'm levelling, and its good fun, but the only other class I've completed the game with is a soldier - I think the infiltrator is far easier.
