However I did expect SOMETHING I did in at least 1 of the 3 role playing games to have some sort of effect on the ending.
Unlocking the ability to pick from 1 of 3 (almost identical) endings based on some arbitrary army value which is decided by only things you do in the final game was not what anyone expected.
Disappointed I was.

Exactly! and apart from that possibility I remember reading the reaction of Leiliana to my wardens death and feeling very somber at those implications.
Or if you romanced Morrigan. I remember replaying the game just to get the awesome bit of text where it says "One night the Warden felt as if Morrigan was thinking about him over a great distance." It was just a sentence, and it carried weight. I still think about that ending.

Both games are brilliant in itself, but the ending isn't that good in DA:O either.

New Vegas is, in my humble opinion, the best RPG ever made. No other game captures consequences for every little thing you do like that game. It captured what made 1 and 2 classics and brought it today's tech. 3 can suck my balls though

I'd actually be fairly satisfied with a NV-style denouement for ME3. Have a narrator or someone describe what happens to the various factions after the defeat of the Reapers, the descriptions reflecting your own decisions.
