Didn't romance anyone in ME1 so I could be faithful to Tali. Her character is such that I don't believe for a SECOND she would ever cheat on Shepard.
I wanted to give her the same courtesy.

My 6 femSheps stayed faithful to Liara throughout all 3 games. Of my 3 male Sheps: 1 remained faithful to Ashley, 1 hooked up with Miranda and other with Jack.

I've done 2 runs through, with a male and female Shepard, and both were faithful to Ashley/Kaidan respectively. Being faithful to Kaidan was an accident, if I'm being honest, 'cause I missed the boat on Thane's romance in ME2, but in the end I was surprised by how moved by it I was. I'd probably do it again, this time because I wanted to, and not because I'm bad at dialogue prompts. 
I have another couple of Sheps lying around that will complete the Garrus and Tali romances, and then I'll be totally satisfied.

For most of my characters... eeeehm, not so much. Miranda was just too damn tempting. For the one (yeah, singular while that ending remains in place) that I actually ended up playing, I went with a faithful to Ashley one that I made specifically to see "New Ash" after she was revealed. Was hoping for a bit more with the whole "she's a Spectre too now" thing. And, admittedly, not stuck in heavy armor at all times helped too.

Started of with Ashley, then I sort of let her die when I decided it was more important to get a bomb planted, afterwards hooked up with Miranda and stayed together until the bitter end, not enough Miranda in ME3 though.

"Canon" Shepard went with Tali, no others. Female Shepard, can't play through at the moment, but after that little stunt on Horizon, she went with Garrus over Kaidan, never looked back.

She always came off as self centered to my shep. The whole "you broke my heart because you didn't call me when you were dead" thing was just too much. Calling shep a traitor without even trying to understand his motivations was just...wow. and then the accusations on mars.....yea that was friendship.
shep did buy her the tennyson book though.

Stayed true but from what I understand it made no difference as you could rekindle original LI without much problems even if You had another in MS2.

If Vega would've been romance-able well... yeah, he's not, so I stayed faithful to Kaidan, and didn't regret it one bit.
I honestly didn't like Vega before playing, nor is he my type, but the dialogues made me fall hard for him.

I played around with this a lot in later saves, but in my main save I was faithful to Liara all the way. I thought it payed off well. I felt like our relationship was acknowledged pretty much the whole game. The only issue I had with it (besides the obvious), was that I had to reaffirm the relationship with her again even though I had done so in LotSB. I guess this is either a bug or included to give people a way out if they want to change their LI in ME3. Either way, I didn't appreciate her telling me it'd been years when it had been months at most. I was thinking, "Liara, honey, the last thing I did before I blew the Batarians sky high was embrace eternity with you in my cabin."
I disappointed for other players that other romances weren't quite so fleshed out and didn't get more, as I said, I've got a lot of different saves too and was looking forward to going through a variety of romances.

I did a run were I stayed faithful to all my original LI, and I did a run checking out the romances of each romance-able character using a ME1 Ashley LI save.

I went with Tali in ME2, but I romanced Ashley in the first. I was expecting a confrontation, I almost **** myself when I saw Ashley, I had no idea what she was going to say. Turns out she says nothing... And is COMPLETELY fine with it... I was told there would be repercussions...

My first char I took through all three games was a paragon femshep. I didn't like Kaidan all that much (he's just okay) so I decided to try Liara. She was cute and sweet.
Second game, and well, none of the romance options I even liked. Jacob? Eh, no way. Thane? Whined way too much for my liking. Garrus? Good friends, but didn't see a romance there. So I had Kelly dance for me, but that's about it. Was I happy when (just before ME3) I played LotSB, and you can truely get back with Liara, who became a lot more awesome.
Stuck with her through the third. I thought it was adorable when you go to visit her in her room in one scene early on, and she sits in your lap and kisses you on the cheek while you talk. Never regretted it. Felt really connected to the character.

Nope. But I ran back to Liara back on ME2 shadow broker DLC. Liara ftw.
