Bit of an RPer here:
1) I've tried Vanguard, Sentinel, and Engineer on insane. How it combines with squadmate weapons and powers are subtly different, but not by much.
2) Instead of considering best weapons for 1 member, I usually think about how they work together with the weapns they have.
So, my weapon choices are in team combos:
1)
Tali + Wrex
Double Disciple + Double Executioner OR Double Claymore + Double Scorpion
-This combo is good because most Cat6 mobs have high shields, but Disciples stun right through them. As long as Wrex facerolls way up front and Tali hangs back a bit, all is good. Double Claymore is just for lulz on the clone fight. -Either way, barrel mod for both shotguns. Tali gets choker, Wrex gets omniblade. Pistols should always have the power mod.
2)
Kaidan + Javik
-Double Scorpion with warp ammo from Shepard.
-Kaidan can use any assault rifle, but if you spec him as a turtle then its best to use Geth AR or Particle AR, so that he's soaking damage out of cover. I've been using thermal scope on Geth AR against smoke grenades...if someone can prove whether that works I would be grateful. His weakness is his downtime on Reave, so again I like a fast weapon on him to mitigate downtime.
-Javik's problem is that has no tool against tech shields... so he has to default with Adas. (Yes, it's cheap.)
-Key to this combo is its relatively high defense and the sizable burst against barriers, armor, and swarms.
3) Tali + James
-Double up on shotgun as main weapons... but which ones depend on the mission. As far as I know, Graal and GPS both have an AP mod already built in.
-James usually good with Raider/Claymore. I've seen him fire GPS in bursts, so that could work with Incendiaries...maybe.
-Tali will want either Graal or GPS. Claymore is okay if James also has it. (Micro them for Burst.) Disciple is okay if James also has it. (Micro them for stun.)
-Your problem will be shielded enemies, so plan accordinly. Arc and Paladin are both ok choices for Tali. James can default on Adas or Particle AR if things really look grim.
4) Garrus + Ashley
-Double Black Widow if you are rich. I've seen Garrus global two cannibals in a single animation with it.
-Ashley still sometimes have that marksman bug, but she DOES pop out of cover to take single shots. So specc her marksman for accuracy, and take either Kishok or Javelin. Her AR slot would have to default on Adas, due to a lack of active spells. (You could use Revenant or another fast weapon, but no guarentees it will work with marksman.)
-Garrus...Indra and Raptor are interesting choices. But then you aren't shooting to kill. Put disruptor ammo and smoke scopes, and he'll force cerberus enemies to stay in cover where you can kill them with flank or attrition. You can give him Saber for AR if you are using fast snipers. Otherwise just about any of green, alien-looking gun will do the job.
5) Edi + James
-This is assuming you've specced both as tanks. Give Edi power mods on Executioner, and accuracy/stability on Punisher (assuming those mods actually work...I know some of you have said it doesn't). Geth SMG might be a semi-viable choice if you don't care about damamge and only care abouts supression. Just get James to mod it with incendiaries if you do so.
-James uses Claymore, which will combine with Edi's executioner for burst. AR can be Adas or even Geth AR. Anything that supresses and disrupts.
-Don't take this combo lightly: it can faceroll the Grissom Academy gauntlet on insane. Edi is quite tough if you spec pure defense.
6) Liara + any other biotic
-That is to say, either Kaidan or Javik. With Liara on your team, Kaidan/Javik will serve the same sort of role. Adas or Particle AR for this guy. Or any other fast and accurate AR of your choice, really. Mod everything with Warp ammo.
-Double Scorpions. Barrel, Power Mod, Warp Ammo.
-Liara's SMG doesn't really matter. You can default on the Punisher. As long as it detonates biotics.
7) James + Garrus
-James will use one of those long-range shotguns with rapid-fire, probably GPS or Graal. Then Saber for AR slot.
-Garrus will use a relatively fast, urban-combat style AR... any one will do. His main punch will come from any one of the power-shot snipers, such as Javalin or one of the Widow variants.
-Use Widow+Saber with AP rounds for big targets far away
-Use (any)AR+GPS with Incendiaries for smaller guys in close quarters
-Be sure to have both a long range weapon and a short range weapon of your own to help them. Even if you are a caster, equip Raptor and Acolyte with weight mods, just in case they get overwhelmed.
