Would have been nice. It'd be easier to really see the impact of what we had done and see the difference those war assets made, than getting three endings that were more or less "eh" on the victory scale.

This is the problem with the whole new ending movement. A lot of us want a new ending, but really any ending they make won't satisfy the whole. Because there are too many people who want too many different things. Really, in the end, any new ending would probably not inculde a happy "blue babies" ending. It could, but more than likely it would still involve a lot of unhappiness.
The ending should be changed because there isn't closure, not because its not the ending people wanted IMO.

That doesn't make sense - I expected an ending, if I'd gotten one I'd have been satisfied.

I agree, that they shouldn't change it if the ending was actually coherent. But some people really do want that happy ending (and I doubt they'll ever get what they really want...have to say you guys are going to have to go read some fan fic, unfortunately).

The more I think about it the more I wanted an ME2 style ending. Using the entire squad, choosing who does what. If you did everything right Shep and crew survive. I actually thought it be interesting if Earth itself was destroyed/sacrificed but the relays stay intact.

Much like the ending of ME2, If you did everything right then everybody survived, if you didn't then some died and even you if you completely ignored it all.
Using the War assets would be great to do this, your choices through the game determines how much war asset you get and the war assets determine what end you have. Low assets means you'll likely to die and the reapers win, decent amount means you'll die but some of the team mates and fleet may survive, over the average means you survive, most of the team and a high portion of the fleet survives and a certain high amount of more means you'll survive, your team survives and the majority of the fleet survives.

I mean really it would completely undermine such an epic enemy that has harvested all life for atleast 2 billion years. Shepard should be able to live obviously, but it should be hard to achieve. There will always be heavy losses when fighting this foe.

Not really, you don't see this level of fan outrage at games with the potential for happy endings.
Yes, fans want a wide variety of endings, reflective of their choices in the three games and that includes a happy ending.
