Because Bioware/EA will be making good on their advertised claims, and fixing a faulty product.
We did not get what we were actually paying for in the end.

Some journalists have pointed out that if Bioware does "cave in", as they put it, then it sets a dangerous precedence for future games. They completely disregard the fact that Bethesda did it in Fallout 3 and, even earlier than that, back in the days before television, Sir Arthur Conan Doyle did it with Sherlock Holmes after fans wrote to him.
I understand the point behind what Bioware tried to do with the ME3 ending (to a degree. Some things just totally confuse me as they just do fit.) The ending does have a wonderful message of hope. Yes Shepard died (unless you had enough EMS for the destroy ending to show you an N7 body taking a sudden breath,) but she (I play FemShep) died to save the galaxy. Yes the Normandy crashed landed on a fertile planet but they lived and eventually populated the planet, granted I'm sure Doctor Chakwas provided plenty of pain pills to Joker for the pelvis I'm sure he kept breaking. However, the current ending just doesn't fit. bioware tried to out do themselves with it and it just didn't work. It's a learning experience.
TLDR; Nope. I'd be happy and sho should everyone else.

Without going into paragraphs of "why I didn't like the ending", I would just like closure to the Mass Effect series to be more in line with something Bioware made... not Square ENIX. if I wanted to play a JRPG, I would play a JRPG.
I didn't want to play a JRPG.
I wanted to play the last part of a trilogy to a Science Fiction RPG (or Cover-Based Shooter RPG, depending on what crowd you want to speak to) that did its best to explain how the galaxy worked and did not rely on "mysterious energy", "crystals", "espers", "magicite", or "the power of the heart".
If I cannot be provided a proper ending by Bioware, then I would be just as satisifed with an honest statement as to why and an apology for speaking to me as a child, instead of as a customer. I would like enjoy the promise of the studio's leadership that they will do better next time and continue to be a company that is known for quality... not quantity.\\
Fixing a lapse in poor writing and game design or providing me a professional and honest answer is acceptable to me. I would not be outraged and would continue to pay money for their products and continue to speak highly of them to my friends, families, and internet associates.
They did a good thing with Mass Effect and it is a pity that, despite all their success and glory ... Mass Effect will always be associated with, "It was great, but..."

and NO because if they did it would not negate my previous 120+ hours and give me my 'actual ending with closure' they promised. It would also not have technically been against their 'various different endings claim. It would mean replaying ME1-3 in different ways is actually worthwhile.
I would be equally satisfied with a - we did this ending because, these plot holes such as Normandy are explained by x y z.

Their team had two years to come up with this one. Pushed to assemble something in say two months, there's no actual reason that it couldn't be EVEN WORSE than the current one.
Although that would be strangely impressive, in it's own way. Just not good.

I would like some content to the ending - remake the entire last section well, and make it like a full sized DLC - but I would not be outraged if they released it. It is what I have been pushing for.
I would be outraged if fans gave them full credit for the indoc theory if they used it - as fans came up with that, not Bioware, and they should not be kissing Bioware's feet after they stole their work, but I will be content if the ending is improved.
