Best overall ammo for a Infiltrator?

Energy Drain takes out shields / barriers and Incinerate takes out armor so the other ammo types are basically worthless.

AP and Warp Ammo both have some impressive damage stats... but if you're an Infiltrator then they're both a bit of a waste. The better sniper rifles can already penetrate cover, and Disruptor can also penetrate barriers this time (but I don't remember how well).
I happen to be a fan of Defense Matrix as my bonus power on Insanity. If your shields go down on Insanity you'll die VERY QUICKLY unless you can get them back up, and Defense Matrix lets you fully restore them instantly.

Gives pretty good coverage. Disruptor's stun effect can be pretty useful, and naturally squadmates will be freezing or slowing down things all the while too

I don't think so. I'd be more positive (as it says frozen, not chilled) but then the other evolution says it reduces frozen targets' movement...and obviously if they're frozen they're not going anywhere

Disruptor ammo...is not a top two ammo power in the game. Warp ammo is, unless you find mooks a lot tougher than Brutes and Banshees. Shields in general are a joke to bring down in this game. Armor is far more of a problem, even with adequate preparation.

I prefer Disruptor as my primary ammo power, and it works great for high-power sniper rifles, punching through shields and barriers like they aren't even there. I find Incinerate suffices for anti-armor capabilities. Plus, give Garrus a Particle Rifle and turn on his Armor-Piercing Ammo. Brutes die.
Cryo is great with an SMG, Scorpion pistol, or Shotgun. Mostly for husk rushes. It's particularly fun with a Scorpion and a scope against Cerberus, but hardly essential.
