I just met up with her in the holding bay last night and I did a paragon interrupt when she was going to talk with her sister. I picked all the paragon options before that. So what now? Every time I talk to her after a mission she doesn't go into a full dialogue sequence.
So I'm going to romance Ashley.

She doesn't do that a lot actually. In fact, not a lot of full dialogue sequences period in the game.
Instead you get a bunch of excellent "click and listen to an exchange." Sadly Ash felt like she had less than the others at that even. Part of it is the cut corners in development that affects all the characters. Part of it is the pacing of her story. Part of it is her headspace. She's still slow to open and trust you, give her time. You'll eventually get some more non-interactive scripts from her other than "Hello Shep" sorts.
